The Jasper Hill Georgia's Paddock Shiraz 2024 is a deep, savoury Heathcote Shiraz in magnum, built on dark fruit, iron and spice rather than sweetness or bulk. Drawn from Jasper Hill's dry-grown organic vineyard in central Victoria, it carries real concentration while staying composed and fresh.

Blackberry, dark cherry and satsuma plum lead the aromatics, with violets lifting above and a peppery, gently earthy edge underneath. Air brings out ironstone and graphite, plus the dried herb and licorice character that marks Shiraz grown on Heathcote's ancient Cambrian soils.

Georgia's Paddock is powerful without being heavy. Fine, firm tannins run the length of the palate, acidity keeps the fruit bright rather than jammy, and the finish is long, mineral and dry. The 1.5L format matters here: a magnum holds its fruit and structure for longer than a standard bottle, so this is the one to buy if you want the wine to keep its shape well into the next decade.

Worth opening for a table rather than a Tuesday. Slow-roasted lamb shoulder, a standing rib roast, duck with cherries or a mushroom and thyme ragù will all meet the tannin head on, and aged hard cheese sees out the last glass.

Drink from 2028 through to 2045, decanting an hour ahead if you open one young. Magnums reward patience more than most.
