Description:

61% Adelaide Hills
39% Clare Valley

Tasting Notes:

On release the wine is a very pale straw colour with a youthful green hue.

Taylor's Jaraman Chardonnay has intense lifted aromas of melon and lime with hints of stone fruits. There are underlying tropical notes of green pineapple and guava and subtle secondary characters of flint, cedar and spice.

The palate delivers what the bouquet promises; citrus fruits, fig and melon flavours along with a clean, mineral acidity and a touch of lemon zest.

Texturally, it is very delicate, with a soft mid palate and well integrated oak.

The Clare Valley parcel delivers mid palate fleshiness whilst the Adelaide Hills component contributes restrained fruit characters and a hint of minerality that is typical of this region.

Overall, the Taylor's Jaraman Chardonnay has a great lingering palate line.

Vintage Conditions:

In the Clare Valley, the season for vintage 2021 commenced with good late-winter and early-spring rains. Dry conditions prevailed from November onwards, with rainfall well below average for the remainder of the growing season. Weather conditions from mid to late November were ideal for flowering and fruit set. The latter half of the season was ideal for fruit development with some of the best conditions seen in the last 10 years. In the Adelaide Hills, the region enjoyed a long, cool ripening period with adequate soil moisture levels to keep vines in top condition. The wines were typical of this cool climate region with excellent flavour development.

Oak Maturation:

All of the free-run juice was fermented in quality French oak barrels (60% new and the remainder in a combination of 2 and 3 year old). After fermentation the wine was matured for a further 8 months in French oak before both regional parcels were blended and prepared for bottling.
