Style

Shaw + Smith Shiraz is a medium bodied cool-climate Shiraz, in which balance is more important than power.

Tasting Note

Lovely fresh aromatics of red berries, which is followed on the palate by intense pure fruit notes including raspberry and blueberry. The palate is long and layered, with ample fine tannins, and background notes of clove and black pepper. Food Wagyu Hamburger with Bacon, Gruyere Cheese and Zuni Pickle.

Vintage

2012 was a terrific vintage. Beautiful weather, without extremes of temperature, produced pristine fruit with great flavours. The only downside was that crops were lower than expected, but a price we were more than happy to pay for great quality.

Source

From low yielding vines at Balhannah, in the central Adelaide Hills, and Macclesfield, the warmer and drier sub-region to the south. Low yields achieved by aggressive pruning and pre harvest bunch thinning.

Vinification

Hand picked, crushed and fermented on skins in small fermenters with hand plunging and gentle pumping over to extract colour, flavour and tannin. Malolactic fermentation in French oak barriques

Maturation

Aged in new, one and two year old French barriques for 14 months. Special care is taken not to over oak the wine to maintain fruit integrity.

Cellaring

Has the concentration and structure to develop fine tertiary characters in bottle over the next 10 years. History The Adelaide Hills has now proven it can make truly exciting spicy Shiraz. The key is careful site selection, low yields and restrained use of oak
